Russian Cuisine. Russian food is famous for its meat dishes, shchi (cabbage soup), borsch (beetroot soup), okroshka (cold vegetable soup), blinies (pancakes) with sour cream or caviar, cabbage pie, beef a la Stroganoff and chicken a la Kiev, a variety of fish dishes– salmon, sturgeon or trout. Siberia is known for its pelmenies (dumplings). Tea with lemon is the traditional Russian beverage.
